Garlic Ginger Sheet Pan Carrots

Grilled Carrots covered in a sweet honey butter glaze and seasoned with garlic and ginger.

  1. Preheat grill or oven to 425o F
  2. In a medium saucepan, add butter, honey, garlic, and ginger.  Simmer over medium heat for 5-8 minutes. While glaze is simmering, peel and chop carrots.
  3. Toss carrots into thickened glaze and stir until well coated.  Place coated carrots on a lined sheet pan using tongs or slotted spoon.  Do not crowd carrots on pan.
  4. Once carrots are on sheet pan spoon remaining glaze on top and season with salt and coarse ground pepper.
  5. Place on grill or in oven for 15-20 minutes, until tender.
  6. Garnish with fresh parsley before serving.
