Spicy Pickled Tomatillo

  1. Peel, clean, and cut tomatillos into wedges. Set aside.
  2. Ina large clean jar, add all the ingredients, layering in the garlic, peppers, and tomatillos in the jar. 
  3. Add 1/4 cup white vinegar and then add equal parts hot water (not boiling) and white vinegar to cover and fill the jar.  
  4. Shake and store in fridge. Shake daily, ready to eat after 3 days.
