Each Tuesday here at the South Shore Kitchen we bring you a new cocktail to try in a feature we like to call Cocktail Corner, typically we try a new drink from our list of underappreciated cocktails. This week we are mixing it up a little bit and telling you all about a drink that we are in love with. It’s definitely not on the list but it is amazing! A spicy prickly pear margarita. It’s sweet, spicy, tangy and so refreshing you could drink them all day long! Calling them a margarita is a bit of a stretch but they do have tequila. That counts, right?
Prickly Pear Syrup
It’s sweet, it’s tart and it was born to be in a cocktail. This vibrant magenta syrup is sure to dazzle anything you drizzle it on. We are in love with it! Here at the South Shore Kitchen we are always fans of the DIY life. So, hop on over and check out our recipe to make your own prickly pear syrup. Quick note of caution, prickly pear juice will stain.
Not a fan of making stuff? You can grab a bottle of prickly pear syrup on amazon. Full disclosure, we haven’t tried it but just wanted to let you know there are options.
In tall pint glass add 2 ounces prickly pear syrup, 2 ounces of your favorite tequila, 1 ½ ounces fresh lime juice, add ice and top with ginger beer. Give it a quick stir and enjoy.
Here’s the part where we would normally review the spicy prickly pear margarita. We could go on and on about this one. It is so freaking good! Light, refreshing, you could drink it all day long! This is one of those stunners that can be made with or without alcohol and you wouldn’t be mad at it.

Spicy Prickly Pear Margarita
- Yield: 1 pint 1x
- 2 ounces tequila
- 2 ounces prickly pear syrup
- 1.5 ounces lime juice, fresh
- Ginger beer
- Lime wedge, optional garnish
- Pint glass or 2 rocks glasses
- In a pint glass, add prickly pear syrup, tequila, fresh lime juice and ice.
- Top remainder with ginger beer and garnish with a lime wedge.
- Stir and enjoy!
