Cheers to you! It’s Tuesday and here we are trying out a new cocktail. Each and every Tuesday at the South Shore Kitchen we mix up a new drink for Cocktail Corner, give it a taste and provide an honest review. This week we are trying a watermelon mezcal cooler with watermelon, mezcal, and ginger beer. It’s cool, refreshing and a little bit spicy.
Quick & Easy
When it comes time to sit down and relax with a drink there is nothing better than quick and easy. All you need to do is puree fresh watermelon with lime juice, mint leaves and simple syrup. Grab a pint-sized glass, fill with crushed ice, add enough watermelon puree to fill glass 1/3 full, pour in desired amount of mezcal, and add ginger beer to top of glass. Garnish if you please and enjoy!
The team has spoken and we are giving this a solid 4 out of 5 cheers. Its really good but not something we are left obsessing over, like the nectarine splash. A watermelon mezcal cooler is definitely delicious on a hot sunny day or great for sipping poolside. Fruity and refreshing but not sticky sweet.
We recommend trying the watermelon mezcal cooler but if you are looking for other cocktail ideas try a dark and stormy, Oaxaca old fashioned or a pineapple rum smash. Watermelon Mezcal Cooler
- Total Time: 5 minutes
- Yield: 2 Servings 1x
- 8 oz watermelon
- 1.5 oz lime juice
- 1.5 oz simple syrup
- Sprig of mint leaves
- 3 oz mezcal
- Ginger beer
- Crushed ice
- Optional garnish- limes, watermelon & mint leaves
- In a personal blender, puree watermelon, lime juice, and simple syrup.
- Fill 2 pint-sized glasses with crushed ice.
- Add watermelon puree to fill each glass 1/3 full, pour 1.5 oz of mezcal in each glass and top with ginger beer.
- Garnish & Enjoy!
