Rice Krispy Treats
Ingredients:
- 10 tablespoons butter
- 680 grams mini marshmallow
- 1 teaspoon salt
- 1 teaspoon vanilla extract
- 10-12 cups rice krispies cereal
Instructions:
Prepare a 9×13” baking dish, grease with shortening and set aside.
Melt butter in a large heavy bottom pot over a medium low heat. Once butter is melted, add marshmallows and keep stirring until it’s a smooth and creamy consistency.
Stir in salt and vanilla.
Add 10 cups of rice krispy cereal. Working quickly, keep stirring over the heat until everything is combined. Only add enough cereal until everything is coated. You don’t want any dry spots. If you are adding a handful of mini marshmallows, add them now.
Pour rice krispy mixture into a baking pan. Smooth down carefully, but do not press down. You don’t want them to be compact and dense. Set aside and let cool. Once cool, cover and let them set.
Cut treats into squares and wrap individually in plastic wrap. They will stay fresh for several days/
Notes:
- You can use the regular size marshmallows but you have to stir them longer.
- Optional upgrade-reserve 1 cup of mini marshmallows to stir in right before pouring mixture into the pan.
- Use the cereal measurements as a guideline, you only want to add as much cereal as needed for the mixture to cover. You don’t want it dry or too saucy.
